Meet the guest:
Dr. Jordan Wicks, Assistant Professor at the University of Nebraska-Lincoln, brings over nine years of experience in meat science and processing. She earned her Ph.D. from Virginia Tech, where he managed a meat lab and led research in pork quality and food safety. Dr. Wicks has also served as Food Safety Manager at Conecuh Sausage Company and Plant Manager at Fatback Pig Project.
